Chops with Creamy Chive Sauce

A quick and easy weeknight meal you can whip up in less than 30 minutes. This super tasty recipe is really easy to prepare and with just 5 main ingredients, it’s easy on the wallet, too.

Prep time: 10 minutes

Cooking time: 10-15 minutes

Serves 4-6


2 T. extra virgin olive oil

8 4-oz. boneless pork chops

½ c. chicken broth, preferably organic

6 oz. cream cheese, cut into small pieces

3 T. fresh chives, finely chopped



Salt and black pepper, to taste
Additional fresh chives, finely chopped, for garnish


  1. Heat olive oil in a large, heavy-duty skillet over medium-high heat.
  2. Season pork chops on each side with salt and pepper, if desired, and add to pre-heated skillet. Brown pork chops on each side, approximately 3 minutes per side. Remove pork chops from pan and set aside on a rimmed dish to collect juices.
  3. Reduce heat to medium and add chicken broth and cream cheese to the skillet. Gently scrape bottom of pan to loosen brown bits and continue stirring until the cheese is completely melted, approximately 4-5 minutes.
  4. Add juices from the plate holding the pork chops to the skillet. Stir to combine liquids, then add pork chops. Cook for 1-2 additional minutes. Remove from heat and stir in chopped chives.
  5. Transfer the pork chops to individual serving plates and top with creamy pan sauce. Garnish with additional chives, if desired, and serve immediately with your choice of sides.

Holy Guacamole Dude!

This chunky homemade Guacamole is excellent. Fresh and easy, and healthy too!

Whip it up and enjoy!


  • 2 ripe Avocados
  • 1 ripe fresh tomato, seeded and diced (Dudes recommend Roma’s)
  • 1 large clove fresh garlic, finely minced
  • 1 fresh lime, juiced
  • 1/2 tablespoon fresh cilantro leaves, stems removed and finely chopped
  • Salt and pepper, to taste


With a sharp knife, slice the avocado from top to bottom, cutting all the way around the fruit. Place the avocado in the palm of your non-dominant hand and gently the top half clockwise until it easily separates into two pieces.

To remove the seed, “whack” the seed with your sharp knife so the blade sticks into it. Gently turn the knife until the seed pops out.

To dice, score the avocado while still in its skin but cutting equally sized slices from top to bottom. Then, rotate 90 degrees and do the same thing going side to side. This combination of horizontal and vertical cuts will give you equal sized chunks of diced avocado.

To remove from skin, take a spoon and gently scrape all on the bottom of the flesh (where it meets the skin) until all your diced chunks are removed.

Place diced avocado in bowl. Add diced tomato, garlic, lime juice and fresh cilantro to bowl and combine with a fork. Season with salt, pepper and additional lime juice, if desired.

Serve with favourite Mexican entrees or on its own with tortilla chips.

Turkey Noodle Soup

Here's a tasty soup recipe that takes the old Dude back to his childhood.  There's nothing better than a hot bowl of soup. And this soup with the noodles, veggies, and turkey tastes great and will fill you up too.


  • 1 lb ground turkey
  • 2 tablespoons Olive Oil
  • 1 Onion – chopped
  • 2 medium Carrots – chopped
  • 2 cloves garlic – minced
  • Salt and Pepper
  • 3 cups Beef Broth
  • 16 ounces Tomato Sauce
  • 1 large can diced tomatoes
  • 1 tablespoon Worcestershire
  • 1 teaspoon dry marjoram
  • ½ teaspoon dry thyme
  • 2 bay leaves
  • 1 ¼ cup elbow macaroni
  • 1 ½ cups frozen corn


  1. Heat olive oil and saute onions and carrots
  2. Add in turkey and garlic, and season with salt and pepper
  3. Add the beef broth, tomato sauce, tomatoes, worcestershire, marjoram, thyme, bay leaves, and corn
  4. Bring to a boil
  5. Add the elbow macaroni and cook till the macaroni is tender
  6. Eat!

Tim’s Secret BBQ Rub

This top secret spice rub was carefully crafted through trial and error over the years. It is perfect on chicken and pork, and can be used as a marinade prior to cooking, and applied while cooking.


  • 1 cup Dark Brown Sugar
  • 1/2 cup Paprika
  • 2 1/2 tablespoons Course Black Pepper
  • 1 1/2 tablespoons Chilli Powder
  • 1 1/2 tablespoons Garlic Powder
  • 1 1/2 tablespoons Onion Powder
  • 1 teaspoon Cayenne
  • 1 teaspoon Chipotle Chili Pepper
  • 2 tablespoons Kosher Salt
  • 1 tablespoon Dry Yellow Mustard

Mix all spices together in a large bowl. Transfer to an air tight container (shaker bottles work best). Apply liberally to meats before smoking, BBQing, or Baking.

TIP: rub the meat with yellow mustard before putting the dry rub on it.
